Yemen Matari is one of Yemen’s most celebrated traditional origins, grown on the high terraced mountains of Bani Matar. Cultivated at elevation and naturally sun-dried, it produces a dense, structured cup with a deeply expressive character.

At DALAL, each lot is roasted in small batches to preserve the classic profile associated with Yemeni coffee.

Grinding fresh preserves the full aromatic character of the coffee. Adjust your grind size and dose to shape body, clarity, and balance across your preferred brewing method.

Starting Ratio (1:16): 20g coffee to 320ml water.

Format: Medium Grind

Drip & Pour Over

Our standard grind for daily brewing. Designed for balance and clarity, allowing the natural sweetness and structure of Matari to fully express.

Traditional Yemeni Preparation

An ultra-fine grind crafted for the ibrik (jazwah). This method produces a dense, layered cup with deep aromatics—reflecting traditional preparation styles of Yemen and the region.

Starting Ratio (1:12–1:14): Adjust to preference for intensity and texture.

The Golden Rule: Precision creates consistency, but preference defines the final cup. If the brew feels too intense, extend with water. If it feels light, increase your dose. For optimal extraction, use filtered water at 195–205°F to fully develop the Matari’s natural sugars and depth.
